Fygey
A fig & almond pudding - contributed by Becky Hoover
  • 4 ounces ground almonds
  • ½ cup water
  • ½ cup wine
  • 1 cup dried figs, cut into quarters
  • 1 cup raisins
  • 2 tablespoons honey
  • ½ teaspoon ginger
  • ¼ teaspoon salt
Mix ground almonds into a paste in a saucepan with some of the wine or water.  Add the rest of the liquid and allow to steep over medium heat while cutting the figs.  Stir in all the ingredients and cook for 5 minutes or until thick and well blended.
