Sweet English Peas

DESCRIPTION: Peas seasoned with mint


  • 1 lb. peas
  • 2 oz. butter
  • 1 Tbs. chopped fresh mint
  • 1 tsp. sugar
  • salt
  • freshly ground pepper
Cook the peas in a small amount of boiling salted water until they are tender (approx. 2-5 minutes depending on their size). If you are using frozen peas, follow the instructions given on the package. Drain and set aside.

Heat the butter in another saucepan and add the peas, mint, and sugar. Toss and cook gently for 2 minutes. Season to taste with salt and pepper and serve.
