DESCRIPTION: A rolled stuffed steak, baked in sauce


  • 2 onions, chopped
  • 2 lbs. round steak
  • 2 Tbs. beef suet, chopped
  • 2 hard-boiled eggs, chopped
  • 1/2 tsp. ginger
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 Tbs. parsley
  • 1 pinch saffron
Sauce:
  • 2 cups beef broth
  • 1/2 cup bread crumbs
  • 1 pinch saffron
  • 1 Tbs. red wine
  • ginger & cinnamon to taste
Lat steak out flat in one piece. Mix together parsley, onion, eggs, suet, ginger, salt, & saffron. Spread this mixture onto the steak. Roll up the steak and tie shut with string. Grill or roast until brown.

Bring to a boil all the ingredients for the sauce; reduce heat and stir until thick.

Slice the beef roll into approx. 1-inch slices. Arrange in a pan. Cover with sauce and bake at 350° F for 20 minutes to 1/2 hour. Serve.
