Three Sauces for Chicken

DESCRIPTION: Appropriate sauces for chicken


1.

  • 2 Tbs. butter
  • 1 medium onion, chopped
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 1 Tbs. dried bread crumbs
  • 1 Tbs. dry sherry
  • juice of 1 lemon & 1 orange
Melt the butter in a saucepan and sauté the onion until it is tender. Add remaining ingredients and simmer for about 5 minutes. Serve with chicken or capon.

  • 4 Tbs. butter
  • 2 Tbs. chopped parsley
  • 1 tsp. cider vinegar OR: 1 Tbs. lime juice
  • 1 tsp. sugar
Melt the butter and add remaining ingredients. Simmer 2-3 minutes. Also excellent with fish.

  • 1 Tbs. lime juice
  • 1 tsp. sugar
  • 1 Tbs. dried bread crumbs
  • 1 Tbs. dry sherry
